Some type of profession side class would be cool I think; something similar to the system that is in World of Warcraft. Not on like a super-massive scale or anything (although that would be sweet, replayability is what keeps people...well... replaying.), but perhaps something like;
Blacksmith - They collect different combinations of non-rare items to forge into cool rare-items that they could sell. The forged items would be level-restricted and have a max number.
example:
I want to forge the horned breastplate of the minotaur. I can do this because I have 100% in blacksmithing. I have a list of "recipes" that I unlock based on my proficiency in blacksmithing and my level.
