Imoutgoodbye Posted July 10, 2011 Report Share Posted July 10, 2011 Found a recipe last month and altered it a bit. -5 lb. bag red potatoes (I assume you can use other potatoes. I've used golden) -Bag of sharp cheddar cheese (after trying a bit, I'd say go for the Kraft brand with the philly cream cheese added. You will need 2 bags of that, though) -1/4 to a 1/2 cup of extra virgin olive oil. (I like to use a little more than 1/3 of a cup, but slightly less than 1/2 cup) -1 tsp black pepper -1 tsp garlic salt Preheat your oven to 450 degrees. Set your oven rack to the second lowest setting. Get out a cutting board and start washing your taters! Cut the very ends off the potatoes so there's a decent amount of white showing. Then slice up the potatoes so they're about 1/4 to 1/2 inch slices. You can adjust to whatever thickness you want. When all your potatoes are cut up and in a bowl, pour the extra virgin olive oil in and shake the bowl around to get the potatoes coated. Next add your pepper and garlic salt, mixing it up with your hands. I say hands because I've found that it's easier to get your spices mixed/coated as you want. However, getting your own hands covered in extra virgin olive oil/garlic salt/pepper is messy. You'll need to scrub your hands vigorously to get the filmy stuff off. Maybe get some food prep gloves. The cheap plastic ones. Now that that's done, make sure you have two cookie sheets, with raised lips on them. Otherwise you'll have a mess in your oven. Make sure they're non-stick pans, too, or you'll spend forever cleaning those pans afterwards. Arrange the potatoes on the pans and pop them in the oven on that lowest rack. Cook for about 15 to 20 minutes, pull 'em out, spread your cheese on as you wish, pop 'em back in the oven until the cheese melts and enjoy.
