egreir
Anyone know a good method of making them really crispy?
Akoz
I have learned you need to turn the heat up higher then recommended and/or painting them with butter(or similar).
Elrozin
Before you put them in the oven, coat them with extra virgin olive oil and rub salt on them.
Akoz
yeah the oil will do much like butter and attract the eat to the outside layer making it cook a little more on the outside. Like sun tanning oil

Like sun tanning oil Try the salt and extra virgin olive oil. It tastes better than the junk stores try to sell as "butter" and also tastes better than sun tanning oil. Celerity
Yes, essentially more grease and higher temperature during the same cooking time.
jibber
Never liked sweet potato fries because no restaurant around here could make them correctly. I might try myself now. I hate soggy fries, and I hate soggy sweet potato fries even more!
Dead Voodoo Doll
Make them large, like steak fry size, and coat them like Elro suggested then really crank up the heat. The larger size will help keep them from burning.

The-Nameless
Actually if you want a cripsy cripsy taste (similar to say McDonalds) try mixing a smattering of sugar with that salt rub. It gives the fries a slightly crisper outer coating, while letting the fries keep their substance, and flavor, on the inside.
