so besides hit dam, why would any ammunition bother to have stuff like saves on it? There is some ammo in the google doc for IDs, and it shows crossbow bolts with mal saves. Are they supposed to add to your saves?

No. Similarly, anything on projectiles apart from hit/dam does nothing. Nothing on any projectile will add to your score sheet.
