A few things come into account when earning HP. I can't give away all the secrets and specifics but some generalizations:
Some classes get more HP per level regardless of race. Some races get more HP because of con. Add in that a high con will get you more, and a certain class will get you more, you get EVEN more! 
Ogres are an exception to this, in a way. As they get a bonus to HP without the highest con in the game. Their 24 con is the same as a Stone Giants, but Ogres will get more. It's a perk of the race.
So, as a warrior with a 23 con, you should have roughly 900 at 50 (with trains), which is my guess. I just eyeballed the amount.
As a berserker? 1200 No problem. Or so I hear. I've decided that Necros have the worst HP. So, look at the spectrum, make a Human Necro, rank a few times. Rank the same with a Human Zerk, and see the difference. A good way to calculate what your average HP gain a level is, is to do this:
Remove all your equipment, take in how much HP you have. If you've got 750 naked, that is your raw hp. Now, subtract the basic HP you get at start... Minos are...50? So, 700. Now, divide by your level, minus one. So, 700/46 = 15.2 and that's your average gain. Then to extrapolate multiply it by 49 and add your base hp again! Without trains, you'll be batting at about 795 hp at 50. As a minotaur you should have a decent amount of trains at 50 (at least four) so add at least 40 hp to that.
I must have the CRAPPIEST luck when leveling, because I always get crap HP gain on level. Not just crap in general, but the worst for each race/class combo. And, I almost am sure to have as high a luck as possible (which I'm sure has some factor in HP gain, as it affects just about everything else: training, skil/spell success, anatomies, etc.)
